@QuagmireGirl it's a chef's trick. notice how the bowl doesn't spin when he whisks the dressing? if you make a ring with a dish towel (smaller than your bowl base) and then put the bowl on top, it secures the bowl to your working surface. voila! you don't have to hold the bowl with your free hand.

Chef John, what is your view on organic broccoli? I use to eat it a lot and then I discovered, while washing it, a ton of little bugs, almost spider like inside the flourette.. It scared me enough to that I never eat organic broccoli anymore.
@AngryLlamaz they are aphids. they live in non-organic broccoli too. what you can do is fill up a bowl with a 3:1 water:vinegar ratio and dunk the broccoli head-down into the water a bunch of times. that will kill them. then slice it in half along the big stem and dunk that in water to get rid of all of the dead aphids
I've been eating broccoli similar to this since I was a kid. But instead, its cold, with lemon, salt and a little olive oil. It is amazing in the summer. I prefer this over fruit any day!!!

@tronclay You should read peoples comments before making an assumption what they said. I never said its gross to have meat in your salad. I said when its just meat its gross. Its not even a salad if its just meat, or anything non vegetable for that matter.

Weird .. I always use max a tablespoon of salt for vegetables / pasta / rice because it's way easier.
Why ? Because this way, you can adjust the spices after it's cooked to set it perfectly .. and you can't do that if it's too salty after you cooked it.

if you have long stems they are usualy fibrous,
you can use a peeler to peel the lower part,
its very easy and quick, you get nice soft pieces.
they cook as fast as the flowers.
