  • Did u do anything so the dough won't stick to the pan when u bake the biscotti???

  • @Gordon22141 I used a none stick pan and used a plastic spatula so not to scrape the pan. Also, a better way to handle the dough is to wet your hands with water first. Giuseppe.

  • @contrymnon Yes, you can use all-purpose flour - I used to use that for biscotti as well.

  • at first, i confused why he didn't chop raw the almonds. voila, i got the idea... the whole nuts looked good in the biscottis... LOL

  • I just tried this recipe and my family loved it. I used whole wheat flour which made it drier and therefore required an extra egg and two spoonfulls of yougert.

  • @guesswho2390 I never tried it with whole wheat flower, but if you do, try

    substituting some sugar in the recipe with molasses. go for it and let me know how it turns out!

  • @TheOfficialIdiots No, I did not use butter, but you can add 2 tablespoons of butter or vegetable oil and the biscotti will be slightly softer, like a cookie.

    Thank you very much for the video. Before watching this video I could never have imagined myself to be on the 'making' side of biscottis. I made a batch using your exact recipe and another with pistachios, walnuts and raisins thrown in with the almonds. Result? Delizioso!

    With much belt tightening required in this climate, I will be giving this a go.

  • Giuseppe, your biscotti is absolutely wonderful. They came out truly perfect! Can you suggest how to store them once they are freshly made? I.e. do you keep them out for a night and then keep them in a container?

  • Giuseppe I just wanted you to know that I did the biscotti. They are delicious. We always make them, your recipe doesn't call for oil as my mom's but the taste is the same.

    They remind me of the Cantucci made in Tuscany because they are crunchy and delicious!

    PS I had problems rolling them in logs, had to put the batter in the baking pan with a spoon, but the result was the same....

    For some strange reason though, I forgot to split the thing into two logs, and made one big one. Now. little bits of dough at the top of each biscotti are missing. Why did that happen? Please bear in mind that it was the first time I've ever baked anything. Cheers

My father was baker and later became a chef in America - I guess I got some of his technique! I became a bricklayer (retired) and as you can see in my videos, cooking has become my hobby!   • Yes, I made it. It came out good. But not that sweet and I"m usually the type to lessen sugar...so you know it wasn't that sweet! He adds one cup...but next time I'm adding 2 cups and watch your almonds! Mine almost burned.

    Yes, I tried it. It came out good. Just add 2 cups of sugar instead and like I mentioned...watch your almonds....or they WILL burn! Good luck!

  • this way I found it abit too "bready",

    I always use some butter for more "desert" feeling , it keeps crispy edges but without breaking your teeth ,

    Also after cutting it if you put it direct on a grill roster you will not have to turn them over.

    Hope this helps

  • It is a flour batter similar to this biscotti but she would make it like in a loaf with apricot marmalade type filling. The cookie I believe is the typical Italian cookie like a cake cookie. I hope I described it ok and she was from Sicily.

  • Thank you! What a delicious idea - I've never tried it but I would suggest buying a bar of dark chocolate, melt it in the microwave, and either dip the biscotti in the chocolate or drizzle the chocolate over the biscotti, place on wax paper and pop it in the fridge until the chocolate hardens.

  • Joe, you could toast the almonds in the oven.

    I think you put too much flour on the biscotti before putting it in the oven. Also it would be easier if you used parchment paper on the cookie sheet.
