No, he's really dead. It was confirmed by Bryan Konietzko (of the famous Bryan and Mike, creators of Avatar) at the 2007 San Diego Comic Con. Longshot and Smellerbee, however, are still alive. Jet was the only one who died.
He gets frozen to a tree by Katara because he wanted to wash away a town with innocent people and fire nation soldiers, but he did not die there. He dies in Lake Laogai, chapter 17 of book 1 if I'm not mistaken. I made an AMV about him myself, you might want to check it out.
About the AMV: I think the music doesn't really suit Jet, but that's just me.
I really miss him and I'm really bummed that the producers just killed him off like that. Though I always wondered why Longshot pointed an arrow at the end of episode 17.
