If it was a sick bird, you would see that not only in the bird's overall condition and in its flesh, but also from wasted innards. A sick bird would be very easy to spot....Besides....sick birds don't fly at 35-40mph in hard wind!! The proof is wild game survives....no intensly reared meat here!!

Pluck the feathers off, small incision at the base of the breast, push the skin off with your thumbs all the way back to the crop.
THEN slice out the breast either side.
