Last comment : you think this is unhygenic? The cook has vegetarian ingredients that he is frying in high heat. Yes, it is not shiny and polished like in a mall. But he is cooking in the open, people can see what he puts in to his food.

Now think what goes inside a burger pattie or a sausage. Offal, unused scrap meat, fat, tendons, meat steamed off carcass / bones, meat from hooves, anus, tail, other parts of the animal which cant be sold as "meat".
