@Reekyehl We have a lot of plates for bacalhau, specially cod fish with cream (bacalhau com natas) but by the coast of Portugal you will find a lot of fish plates taht change by region,(sardines, sea bass,etc ) but bacalhau you will find anywhere..
So, the coast of Portugal is great with fish and we eat a lot of it, but in the countryside we eat meat...Like anthony said, we hold on to the traditions of our food. Fish, meat, olive, the mediterranean food

Bourdain screams about how great offal is in No Reservations, but he doesn't seem to be overly keen on it in earlier stuff. It would seem he started liking offal very recently.
tha tripe dish is similar to a philippine dish called callos, which, turn on, came from spain. and, oh, the philippines was named after king philip of portugal.

and the portuguese republic was only founded after the revolution of 5th october 1910(another holiday here) after d.manuel II - king charles younger son - was dismissed from his throne.
