It's called a switch jump, there's an ingame tutorial for that. Once you master that you can pretty much beat any level in the game. ;D

aw man I am stuck trying to get to the 4th checkpoint. I get 1, 2 just, 3 by a hair and then I am stuck for hours. damn my sausage fingers.

You want to avoid having your front wheel lift off the ground too much, so don't open the throttle all the time. Don't use the brake either when you're on a steep hill, instead you can accellerate a bit to keep yourself from going down.

It takes a while to get a feel for the bike. I recommend you to hold off playing the hard levels but instead try to get all easy and most medium levels without falling down. It's a good exercise and when you feel confident enough you can try again. Good luck!
