Both methods have been used throughout the history of stop-motion animation,but for this kind of character, it is far easier to replace just the mouth. To have replacement heads would be difficult because the eyes and eyebrows are always different thus resulting in too many variables. Of course the option I ended up utilizing because of the type of clay I had was simply remolding the mouth each frame instead of replacing.
@parkerphil20 I generally animate at 15 fps, and for this particular project, it took me over fifteen hours total to animate 400 frames . This means that on average each frame took me about 2.25 minutes to animate.

@Pesskie Thanks. My light source was a simple lamp clipped to a tripod behind the camera. Please see behind the scenes pictures after video. The camera is a Logitech Quickcam Pro 9000 webcam. It is about as good a webcam you can get though reasonably priced. It is really good quality too. The reason the video is so blurry is because I had accidentally utilized the digital zoom which blurred it up. I edited the music with Audacity and I edited the video with Windows Movie Maker.
Very Cool! I would like it if you could make a tutorial on the mouth movements. i will be trying this stop motion soon and i have purshased a wallace and gromit plasticine set, so i would find it very useful if you made a tutorial so i can have a go at this. Thanks.

I use van aken,and roma plasticina,roma is better as its much harder and doesnt waver according to the climate,
