The "donkey" is FAUVEL, one of the hybrid creatures ubiquitous in late medieval stories.
FAUVEL is an acronym for the common vices: Flattery, Avarice, Villainy (U=V in medieval orthography), Varieté (fickleness), Envy, Lacheté (cowardice). A "Roman" is simply a story (later = novel).
The Roman de Fauvel is a very famous satirical poem about the scandals of the clergy and aristocracy. One of the manuscripts in which it was transmitted was also an important source of 13th/14th- century secular song - the songs were composed (or collected) to illustrate important moments in the story.

I'll have to look up "Roman de Fauvel" -- I'd give a lot to find out what part that donkey plays in all this.
