    The recipe looks ok with me. I wouldn't say it is the RIGHT recipe.. but..

    you can change some parts as it suits you. And it looks fine with me. Just please change the music. I feel like it is Chinese music?

    You can use oil 3 times as long as you filter it.

    If you fry fish, then I throw the oil out.

  • Michael~ This is still one of my favorites. I made it tonight. The sauce is the best, I made it super spicy using four tablespoons of Sambal oelek. I cut up chicken breast in small strips fried it then put it over a bed of rice. So good~ Keep up the great work.

  • Dude I cooked this tonight and it is bad to the bone! I didn't do the batter. Just seasoned my dark meat and coated with cornstarch. Fried em for 10 minutes in my wok and plunged em in your sauce. Very nice indeed!

    If you have some of the stuff with a rooster on it... that is fine to use as well.

    I know that it is different, but you will get the same outcome.

    I got the Sambal from a place around Weinbach & Washington ave... it is more of a japanese place i think, and I don't care for their selection too much... I like the place on green river road way better

    It is just north of Morgan ave in the Lazy Boy complex.

    #1 peanut

    #2 vegetable

    #3 lard

    Pan frying ... olive oil with or without butter

    Then> vegetable oil

    For latino dishes... corn oil or lard

    Do you buy a whole chicken and whack it into 8 parts, or do you buy parts.

    About the deep frying. You've got a thermometer in there--what temp is the oil at when you start? Do you use peanut oil? After finishing the 1st batch is the oil temp lower, and if so do you wait for it to come back up before doing the 2nd batch?

    And while in here might as well ask, what kind of cookware is that big pot, and the big pan you did the BBQ chops in in the previous vid. Thanks.

    I can go both ways on cutting up or buying a cut up chicken, it does not matter to me.. I happen to cut this one up myself.

    The oil temp was around 350F or 180C and yes I let the oil recover to temperature before adding the second 1/2 of chicken.

    I did use peanut oil, but vegetable oil is fine also.

    The cookware is AllClad.

  • When I do fried chicken ( just regular style ) I take fresh chicken legs and breasts and drop them down in melted butter then dip them in flour ..after that dip them in crushed lays regular potato chips..you can skip the flour and just dip the chicken in the melted butter then into the chips and then cook it in the oven at 350 until done....it is so good!!!!

  • it was actually a recipe from a southern living magazine....it is actually really good..the oven crisps up everything and the butter and salty chips that coat it leave it moist and tasty...next best thing to Rachael Ray
