This is a pretty inaccurate video in a lot of ways. For one thing, that's not sushi, it's sashimi. Raw fish is called sashimi. Sushi is vinegared rice either topped or wrapped in with other food. Secondly, that fish is not alive.

Also, living is pretty hard to define. Look up "dancing frog legs" for a good example of definitely dead, but still moving. I think the fish is pretty much dead (brain wise) as it would have no circulation going to it. The responsive nerves, however, can last a good while after any brain function is gone.
