If you let the cookies cool completely they firm up and would probably be sturdy enough for the cookie sandwich - I would soften the icecream first and then firm them up in the freezer. The cookies are really good and it is the best recipe I've used. Thank you!

I think it's the fat content in the recipe that determines how much they spread...as long as they taste good, doesn't matter! I guess you could try reducing the sugar a bit but I would try only 1/4 cup less at first and see what results you get...
I cannot resist eating some cookie dough the rare time I have TIME to bake anything. I think I read somewhere the salmonella is on the outside of the eggshells so maybe if you're careful not to have the egg insides touch the outside of the eggshells you won't have salmonella in the dough?
Also, I bake mine in bars as my great grandmother did. Spread the dough out on your greased cookie sheet evenly and bake a few minutes longer than the regular way of baking cookies. Cool, then cut in bars.
According to Health Canada it is possible that eggs may CONTAIN salmonella, although the risk is reportedly very low. It recommends avoiding eating raw eggs and foods containing raw eggs. The risk is greater to those vulnerable to infection (eg. very young, elderly, and people with already weakened immune systems)...so for a healthy, young adult...you just decide for yourself if you'll take the risk...
