The rock didn't really randomly unlock the last chakra; Aang had unlocked the final chakra in the little crystal cavern underneath Ba Sing Se but got shot down and had his energy locked by Azula and her lightning (Katara made a reference to the energies locked up in the very first episode of the last season). The rock just punted the chakra out of its blocked state.

For me, I've always kind of thought that when you hit the last chakra--detaching for yourself from the world--that it doesn't mean that you can't still love that person. You just have to realize that your duty is the Avatar and protecting the world on a higher level than just yourself.
