@addasphere the food would still float to the top of the sphere even if there was no bubble or pocket of air present. Now, it may be true that the koi would not be so likely to eat it when trapped against the glass vs floating the surface of water; but this is all easily demonstratable.
I do not know how you would feed them tho anyone care to explain??

The air bubble IS supposed to be there, to allow food to float so fish can get it!
