It all looks good to me. I have a Brinkmann Smoke 'N Grill Charcoal Smoker and Grill the cheep one. Can i smoke them on both racks? Or should you just do 1 rack at a time? I have to keep haveing to add charcoal to mine, am i doing something wrong? Thanks Love your videos!
I've done one or two of your rib recipees, but they didn't quite work out. I think my thermometer (an oven thermometer) stopped working properly and didn't give me the right read of the temperature... either that or doing these recipees on a gas grill is different.

Hey Mr BBQ pit. Question for you, would REALLY appreciate an answer.
You cook them for about 4 hours in there...Did you ever add more charcoal? Does the charcoal not die off after 2 hours? If you dont add any and your charcoal stays warm enough, what kind do you use?
I use Kingsford briquettes, but they usually die after a couple hours, and I cant find anything that lasts longer
@vvbn7890 He already had unlit coals in the grill then simply added hot coals on the top. I've done this before and it actually extends the cooking time, but I usually only get a little over 3 hours.
Not much difference between st louis style and the way you trimmed that one up. I love you guys, you have me grilling weekly all year round now. always looking forward to trying something new next week.

Now you give me Memphis style ribs and several more months of practicing before I can add it to the special section on the catering menu! Love the video's!
I upped the ante on this recipe. After cooking, i left in the fridge over night, split each bone section and then cooked over a very hot charcoal grill flame for about 10 minutes adding a nice char-grilled black on each rib. Best spare ribs I've ever had hands down. By the way, the BBQ Pit Boys memphis rub recipe is incredible. I only added ground cumin seeds. Happy eating !!!

@medina41 I usually make my own rub. But last week I bought some McCormicks apple dry rub for some ribs and they turned out awesome. That is some good rub.

@Thiscatsgotclaws one of the great things about barbecue is that there are a lot of excellent rubs, spices and sauces out there to check out. Like Tango spices. And, sometimes it's just plain cheaper to use an off the shelf rub if you factor in the time it takes to make your own.
I personally however never trim up my side ribs. I just keep all that fat and extra meat hanging off the bony side just the way it is, I even keep the membrane on. I just like to keep it all and just let it melt away and tenderize low and slow.
