you should use less charcoal to control the heat and the pig sholud be in place at indirect heat for couple of hours before placing it directly..just a tip...

That looks good but shouldn't you be spanking it with some kind of sauce to create a film so it doesnt fall apart...like an asian honey or oregano garlic orange sauce wich is my favorite...greek style we call it. Drink all night long while you slap it...mmm..mmm What a life!
