I think part of it is due to the fact that Jewish people had education and a little something called the Talmud which kept the flame of knowledge alive through the dark ages. Medieval people were kind of fearful of these people that apparently knew more than they did, and were better at certain things because they were educated and had a drive to do well. Plus the others during the Dark Ages wanted to make everyone Christian and had forgotten that Judaism is the foundation of Christianity.
