    I think granulated sugar is normal sugar.

    1 1/2 Cups Granulated Sugar

    6 egg whites

    and a pinch of salt.

    I was looking for wedding cake recipes and this was one of the steps and i had no idea what it meant when it said "mix until soft peaks form" and "Fold in .." i didnt know that i was making icing, well meringue i should say. This "Icing" recipe helped me make a wedding cake lol :P

  • I tried this today and if you have ever had marshmellow fluff, I thought it tasted similar to it. As for the consistency i continued to mix the icing until it cooled and once it cooled it was like glue. i tried it and i stuck to my mouth and was similar to royal icing... what did i do wrong?

  • @Gilyization hi this is what he said i wrote it down................. 1 1/2 cups of granualated sugar............6 egg whites......1 pinch of salt.................mix it together then mix it again on top of the hot water for atleast 7 minutes until you feel the heat coming out.....then mix again on high speed until it cools down and looks like shaving cream for about 7 min ...................and thas all he said...:)

  • I'm a little confused. This is obviously meringue, but...no butter? I thought they all had butter :/

  • I've found that the egg whites eventually break down and can get the cake soggy. How do you prevent this other than serving immediately?

  • @jedichocccake I'm no pro and haven't tried this recepie, but my guess would be that the salt and heating process helps with that, :)

  • @catwomisen Thanks for the input. Yeah, it does help a little. When I tried the buttercream recipe from the Barefoot Contessa version I made the icing, but omitted the butter. It was during the summer and really humid, so it just deflated with the butter. I iced a cake using the 'meringue' version and it got the cake a little soggy. I also iced it the night before because I didn't have time on the day. Everyone still ate it, lol. :)

  • @monitta2510 No, this is meringue. Royal icing is when you mix egg whites with powdered/confection sugar, not granulated sugar.

  • i tried this & it never got thick like shaving cream, it stayed frothy & soupy... i swapped the sugar with stevia (cuz im a bodybuilder & diet conscious). does anyone know if thats why it didnt get thick, cuz of me using stevia instead of powdered sugar?

  • Wow this looks cool but if u want to make a smaller amount do u subtract one egg white for every quarter cup of sugar coz i only want to frost cupcakes...

  • @friends123sitcom Absolutely, I do it all the time! This is actually just a Swiss Meringue though, if you were to add butter to it at the end of this video, in small chunks, it will make a fantastic butter-cream. Don't get discouraged if it begins to look like it curdles, whip it at high speed and it will come together.

  • You did not show us how to make wedding cake frosting. Rather, you showed us how to make what has always been called "7 minute Frosting". But note, 7 minute frosting is not typically used on wedding cakes -- at least not in the United States that is.
