@Jumpybeaver YES! Pecans work beautifully. That's the nut I originally used for this cake. When I auditioned for MasterChef, I made the cake with pecans that my parents had picked from their tree and shelled. You're SO lucky that you have a pecan tree!

what's that pad called that you dump the candy out on? I can't tell how it's spelled by you saying it. sil-pad? spill-pad? i'm not sure. thanks! great video. also, do you know the weight equivalent to the volume measurements you give?
@FloboeMusic It's the brand name "Sil-Pat" which is made in France. There are a few knock-off brands, and the generic term is "Silicone Pad." I've tried a few...NONE are as good as the brand name. You can get them at Bed Bath and Beyond, or at restaurant supply stores. Also, I have updated the recipe on benstarr.com with weight measurements for flour, sugars, and butter. No weight for pumpkin or carrots, as they will vary.
