What we need is farms and food-processors on the moon. Spaceship comes to the moon, picks up food/supplies from the moon, then travels on to Mars. Perhaps a space elevator on the moon could easily deliver the supplies to the spaceship.
Farms could be maintained by robots(With humans stopping by every once in a while for research/maintenance/etc..).
The Lunar colonists will be carbon importers, I don't think they'll want to sell off their biomass.
Tending to the on board microgravity adapted permaculture will be important to the psychological well being of the crew. Aeroponic gardens should work ok in microgravity. Algae tanks with some fish should shield as well as feed the crew. Pet parrots in the garden would be really cool too.
The Lunar Colonists(Or "Robots" as I like to call them). Wouldn't sell their food unless it was to a nation or company that didn't have anything to do with the initial construction of the farms. It would probably be a NASA/CSA/JAXA/FKA constructed farm(NASA and FKA infrastructure and support systems, CSA robotics[robot farmers], and JAXA Space Elevator[with robotic delivery system]).
