  • Our friend from Napoli would not give us his recipe, said it was bad luck and would ruin his limoncello. Took me quite a few batches to figure it out, almost identical to yours, thanks for sharing. BTW Grain comes as 151 or 190 proof in California, we dilute to 35-42 percent by weight (75 proof)

  • It's nice that italians recipes are brought around the world! As italian I give you some tips: try to use less sugar, like 3 parts of it and 5 of water (1lt and an half of water and 1200gr of sugar for each lt of alcool).

    After the adding of the syrup remeber of wait at least one week before drink it, and to drink it VERY COLD!

  • you want to let it sit for 50 days then filter the lemon out and you can use a calculator to determine what proof you want.

  • i'm 17 and i make a better limoncello. i make it with my grandmother all the time when i visit. zest the lemon instead of a using peeler, don't add as much sugar!! it's a sicilian recipe, not for a gay bar. also let it sit in the jar filled with 20 lemons, and it's not fermenting because more alcohol is not being produced. let it sit for 40 days, add the syrup and stick it in the freezer.

  • @potomacpoint you could store it for as little as a week before adding the simple syrup....i like waiting longer. But I'm sure it will be ok :)

  • @potomacpoint I knew an old Italian guy who stored it for 2 weeks (15 days) he used the same directions....HOWEVER...he was hard core....he only used like 7 lemons. lol. the less lemons the stronger the taste of alcohol.

  • @PrincessDiana161 True, I suppose the liberal policies on alcohol and minors in Europe have somehow taught teenagers to respect it. Im quite a bit younger than 21. If an 18 year old american can take a bullet in the army, vote, and make such important decisions, he should be able to occasionally indulge!! I will be making limoncello, but i swear to be responsible when consuming it!

  • You should try to do that but with coconut. :-) and see how it comes out. we put the coconut under the ground in my country. but we make a hole in the coconut and put the alcohol there but the alcohol we use is from there, but you can use this. i never try with this alcohol but you can.

  • Love the stuff. I've made a big batch of Limoncello each year, but I use a good quality vodka with a neutral taste because the Everclear is way too strong for me. However, with vodka, it will freeze, so I have to be careful. And for God's sake, sip it! Don't toss it down!. I've found that either you love lemoncello, or you hate it. One comment was "smells like furniture polish... ppfffitttth!!! Tastes like furniture polish!!!" LOL

    1) is it 12 lemons for 750 ml of Everclear?

    2) what do u use for pilling the lemon zest ? should I use a ceramic peeler? a chef knife?

    3)if I want 30% alcohol limoncello should I use more lemons?

  • 1 yep, it's 10-12 lemons per 750 ml of Everclear.

    2 I think it's easier to use a peeler ...

    3 You adjust the 'proof' of your limoncello by the amount of water you add ... I'm a geek ... I made a spread sheet with proof versus cups of water!! For 60 proof (30%) you'd use about 7 cups of water with the 750 ml of Everclear ... I use 1/4 cup of sugar per cup of water so 1.75 cups of sugar ... 60 proof is what I make too!!

  • I ran out of space in the previous post but, If you really want the 'proof' formula (that's the cups of water needed for the 750ml bottle) it's 3.15*(195-proof)/proof ... 3.15 is the number of cups in 750ml and 195 is the proof of everclear ... ain't science wonderful!! lol

  • Hi, love the video. Ive used just Vodka not everclear and my lemon peels are infusing as we speak. We wanted it for Christmas here as this will be good after our xmas bbq. But, will the ordinary Vodka be as good as everclear ??

  • Well, and just my opinion, but Vodka gives it an odd taste ... Everclear is pretty much tasteless so you you just get the pure lemon and sugar and alcohol taste

  • We can only get 40% alcochol in Ontario Canada. After only 7 days I found it was very strong and decided to add the water and sugar. It still tastes very strong. I had to add an extra cup for sugar. I didn't get any pith in it so I have no ideas what went wrong. does anyone have any suggestions what I did wrong? Maybe it's our imported lemons that are no good.

  • You need better lemons, when i make limoncello after day 2 its bright like orange juice also if you use a micro plain you increase the surface area the alcohol can pull flavor and color from

  • Hey Princess, I've made this too!!! Man it's good stuff, If you want you can make it to a cream version too. Just Boil Milk twice and both times, take the film of the top then just add to the lemoncello it's delicious

  • I don't understand freezing it.......would it spoil? When you want a shot, you have to defrost the bottle and then refreeze again?

  • Freezing it makes it taste better and trust me with the alcohol content it will never freeze solid, just get a little thick

  • Catholics dont have a stigma against alcohol. Only protestants (baptists etc...). Monks invented cordials. Proof: Benedictine, Chartreuse, Cognac, Champagne, Wine...etc... do some research on your own.

  • a few things for you and your future limoncello.

    1. If you can find a lemon zester (not the one that grates, it pretty much peels the zest right off in like 4 lines) it helps out alot.

    2. Coffee Filters work wonders for the filtering process. it takes a little longer, but works great.

    3. after you addthe syrup, watt 1 more month, sugar adds to the fermentation process.

    FYI, the white stuff makes it bitter, that is why you want to steer clear of it.

  • does making limoncello with zest differ in taste or appearance than making it with peels from the lemons? ive read several recipes and some call for just zest from using a micro plane or zester and some call for peels from using a paring knife. this is my first time making it and im looking for the best and most tasteful way of making it.
