Well, I asked Bill and will post his response. As for the "waste products," yes I was amazed that the processors were doing that but I think it's a question of marketing. They were also looking into rendering (for pet food) but the fuel costs were very high relative to the product.
For the record, I loved Cordova as an authentic fishing town. Made me think that this is what East Coast US ports looked like a century ago.
Cool! FYI, I was just being flippant about the dump they are running, I know some of those folks who own that plant...so I was just joking. Smoked collars and cured salmon roe over crackers are my total fave, I hate to see them end up in the grinder!
I call upon u to review that fish again. There is a good view at 2:17 of this clip. The "nose" of this fish looks nothing like a coho and it's pupil is too large to be a coho. Other clues, arguable but still obvious to me are; this fish lacks a coho's natural chubby profile and has perceptible beginnings of watermarking. I've salmon fished in AK for 30 years, many in CDV. Or we could ask Bill I have his number, I still wouldn't believe him if he said "Coho" but it would shut me up...

Ok that was cool but...sorry that fish (Bill is holding) was NOT a coho, it was a chum and since when are salmon eggs and collars "waste products"?
What kind of dump are they running?
