you can make ur own flat crepe pan surface by using a cast a 14" cast iron pizza pan turned upside down so you have a perfectly flat cooking surface which is essential to slide the spatula underneath. some people might not be aware that you can cook on both sides of cast iron pans. i only just tried it.
