  • PART 4

    - Once the chopped leeks are cooked ( and not much water left in the pan ), add in the pan the chanterelle mushrooms juice ( the one left on the side )

    - Add a liter of beef stock in the pan

    - Let the mixture cook for about 20 minutes and every ingredient is cooked and soft, use a mixer/blender

    - When the whole mixture is blended, add half a cut of fresh cream.

  • PART 3

    - Once the chanterelle mushrooms are hydrated, squiz them a little bit and put them in the saucepan with the other mushrooms. Keep the juice on the side.

    Then add the chopped leeks.

    Add a bit of olive oil or butter if necessary

    - Chop a garlic clove and put it in the saucepan.

    - Add a bit of thyme and sage herbs.

  • PART 2

    - While the mushrooms are being cooked in the saucepan, get a full leek and a half one ( the white part ). Try to chop the vegetable in a thin way so that you'll easily blend the whole mixture once everything is cooked.

    - Once there's no longer mushroom juice left in the saucepan, add a bit of nutmeg.

  • This recipe is a kind of soup but a more ' delicate ' one, made of different kinds of mushrooms and fresh cream.

    PART 1

    - 450 g of chopped button mushrooms put in a pan with olive oil. Then add 100 g of shitake mushrooms ( Japanese mushrooms ). Cook them all until there's no mushroom juice left in the saucepan.

    - Put 100 g of dried chanterelle mushrooms soaked in 200ml of water
