  • Happy Mabon! I just made this today. Sooo delicious! I like very spicy food so I tripled the cinnamon and doubled the cloves. It was so yummy...

  • I also sprinkled a little brown sugar on top of loaf before baking and it was AWSOME!!!

  • this is not a true bread, it's a quick bread, like a muffin, so it won't. Breads made with yeast rise, but this type of bread doesn't rise too much really. It might also not rise too much of you over mix it.

    Actually I've run into the same problem and I used either Stevia or Splenda to replace the honey. They also have low sugar syrups that you can use instead.

    Mixing the splenda with water then boiling it down should work, in theroy, to create a sugar free syrup as well.

  • @ShoryoTombo Agave Nectar is very low glycemic- my mom is diabetic and substitutes light amber agave nectar for anything requiring honey.

  • @ShoryoTombo depending on how sugar sensitive he is, mix, splenda and sugar together, i normally do like half and half for my moms stuff, Baking with just splenda you will get tastless flat hard things that no one will touch, also giving him smaller pieces will help. My mom is Daibetic and she tried eating right and she could not do it, so yeah.

    You could google diabetic friendly honey, but NEVER give a kid under 2 yrs old anything with honey in it, unless a doctor says its ok.

  • @ShoryoTombo yeah once we made brownies with just splenda, they came out hard, crumbly and tastless like cardboard. we halved the sugar and splenda worked just like if we did sugar ..... but remember Too much splenda will give someone the runs bad if they eat alot of it.

    And if you do use sugar with it, just don't let him eat alot of it. My mom will enjoy a piece of cake just a small piece.

    I know there is another diabetic friend sweetener out there but i forgot the name, we're out of it

  • You say raisins/craisins, but would any dried fruit work in this recipe? I have a couple of bags of mixed dried fruit right now, and I'd rather use that then go out and buy more.

  • I got the Agave Necture from a local grocery store. Most of them carry it...it's by the honey or the sugar. Use the apples that you like the taste of.....there are so many kinds...

  • I'm a little bit confused here... In your description you have written that you are an ovo-vegan. Honey is an animal product, therefore it isn't vegan - right? Did you use agave nectar in the video and just said the word "honey", or are you gonna give these loaves away or what?

  • i want to make this so bad but i'd be the only one who'd eat it in my household :( even if i were to eliminate the berries and the nuts! BUT just for future reference...if you were eliminating the berries, would you need to add an extra 2cups of grated apple?

  • If you take out the berries, you may want to reduce the water you add....say by about 1/2 cup...give it a try.
