Mixing the splenda with water then boiling it down should work, in theroy, to create a sugar free syrup as well.
@ShoryoTombo depending on how sugar sensitive he is, mix, splenda and sugar together, i normally do like half and half for my moms stuff, Baking with just splenda you will get tastless flat hard things that no one will touch, also giving him smaller pieces will help. My mom is Daibetic and she tried eating right and she could not do it, so yeah.
You could google diabetic friendly honey, but NEVER give a kid under 2 yrs old anything with honey in it, unless a doctor says its ok.
@ShoryoTombo yeah once we made brownies with just splenda, they came out hard, crumbly and tastless like cardboard. we halved the sugar and splenda worked just like if we did sugar ..... but remember Too much splenda will give someone the runs bad if they eat alot of it.
And if you do use sugar with it, just don't let him eat alot of it. My mom will enjoy a piece of cake just a small piece.

If you take out the berries, you may want to reduce the water you add....say by about 1/2 cup...give it a try.
