  • @surfzion you need high-gluten flour. technically speaking, gluten is the natural protein that remains when starch is removed from wheat grains. why gluten is important is b/c it creates elasticity in your dough. high-gluten flour is made from wheat that has 14-15% gluten. if you can get your hands on commercial-grade high-gluten flour then you've hit gold, but if you can't then domestic-grade will do.
