Absolutely you can do it with 1 ARM. When you use 2 hands and take it all the overhead, that move is called a 2 arm dumbell snatch. Going above shoulder height is fine if you have the mobility in your shoulders and don't have any impingement problems. Just keep in mind it also changes the dynamics of the exercise.

can you also do this with 1 arm? and is it wrong to go all the way upright and not stopping at shoulder level?
at least that is what i see all the mma fighters do.
