You want to keep the dough sticky, so I wouldn't use flour on the dough or on your hands. Oil is a better way, and actually water is a great way to keep from sticking to hands or utensils. Oil the counter and use a stretch and fold technique as taught by Peter Reinhart.
my dough was insanely sticky that my fingers kept getting stuck underneath when I was stretching it under, I followed the directions on how to make the dough and its been sitting in my fridge, should I have mixed it a little more after it was done rising? I'm going to see how it comes out anyway but the dough in the video looks no where near as sticky as mine was =/
@Sohbin If it's too sticky to handle, add just a little more flour (1/4 cup) to your next batch of dough - it will be easier to handle. . With practice, it gets much easier!
