How do you calculate descent?

The FMS/INS will calculate the time to top of descent for you. You need to read the manual.

You should start #2 first. It's the normal procedure, specially in hot and high airports. This is because the duct between APU and #2 is shorter so you have less bleed air leaks and more pressure (PSIG) available. ;-)
