This...is ridiculous...a lot of restaurant owners higher chefs without tasting their food first. A resume is not going to tell you if your chef can cook, their food is. Make them cook you something first. Taste it. Have them design a menu and take a look at it. I mean, come on, this is not rocket science. I dont see how you could possibly hire someone and not know they can't cook.
