She's got her headphones to hear herself for working out the harmony.

So she plays the guitar bit, then later listens to it, whilst recording the harmony on a separate video. Then she records the percussion to a third video.

Then she'll load them all into a video editor such as premiere or many of the other ones out there. In those apps, you'd put down the main lead singing track, then layer the other videos / audios over the top of the base one blending the audio tracks, then trimming the videos back where appropriate.
