they aren't trying to hide the saddles, the hides and/or blankets made them more comfortable. Also, have you ever tried mounting a horse that is wearing only a loose blanket? it's almost impossible to do, especially if your horse is tall. Which, most of the indians horses, being mustangs were on the smaller side, but it is still difficult.
