Surface area has NOTHING to do with french press though. The ONLY reason people grind course on french press is to minimize fines in the cup. Coarse grinds often have less consistent grinds and are worse for brewing temperatures. But she does understand that espresso has a lot of surface area, but she explains that on espresso being a quick brewing method, when it's the other way around. You can do a three minute espresso shot on a very slow pouring ristretto. It just taste like shit.
Now I don't have a clue why I watched this or anything about coffee grinding but when she says at 0:12 about needing surface area, the finer it is more surface area
While you are correct, she doesn't say "lots of surface area," but rather, "proper surface area." I guess this implies that the "proper" amount of surface area is less than the other two grinds.
If you think about it yes, the smaller the thing is the less of it is inside itself, if you know what I mean, so this means that what was inside the coffee is now on the outside, sorry for that shite explanation but look it up, tis incredibly simple
@SheepJumpFish actually, coffee grinds clump up after being moisten, and the more finer the grind, the tighter the clump. That's why when we run water through a super find grind on a coffee filter, we find a curious hockey puck looking object.

@SheepJumpFish just think of wet sand vs wet pebbles, sand will clump and create an almost impermeable surface while pebbles won't clump to that extent
