@OldRelayer, these instructions as well as Jim Lahey's, do not include a proofing rise. After you have folded the dough, you have to let it sit for another 1-2 hours until the dough has approximately doubled in size. All my loaves were too dense before I did this. Put a terry cloth t-towel into a bowl and sprinkle wheat bran over the towel, so the dough doesn't stick to it. Also, make sure the outer surface of the dough is well floured before proofing. Good luck!
Followed the directions, I had nice bubbly starter which is suppose to be good. My dough didn't rise at all. So I went ahead and baked it as instructed, it cooked very fast, the crust is great but the crumb is very thick so it would be because it didn't rise. Have you ever had your container explode. I put the sour dough in a jar that was at least a quarter of an inch thick of glass. Nothing was left but the base of the jar. I painfully stumbled upon pieces of glass for about a month.
@RiCoHeTMcQuEeN I make a ton of sourdough, usually leaving my starter out at room temperature 24/7 because I use it so often. My Dad makes a ton of wine and beer, usually having a few different kegs of stuff bubbling away in the kitchen.
There hasn't been any problem for us yet. The thing about sourdough is that it will usually fend for itself as long as you keep it fed and thriving. The particular yeast/lactobacillus culture in a well-maintained sourdough will crowd out most other yeasts.
Really seems impossible, but really it´s DELICIUS!!!! I've made it several times and it´s allways great! Congratulatios (eventhoug the video is kind of wired)

Have you ever had your container explode. I put the sour dough in a jar that was at least a quarter of an inch thick of glass. Nothing was left but the base of the jar. I painfully stumbled upon pieces of glass for about a month.

@RiCoHeTMcQuEeN I make a ton of sourdough, usually leaving my starter out at room temperature 24/7 because I use it so often. My Dad makes a ton of wine and beer, usually having a few different kegs of stuff bubbling away in the kitchen.
There hasn't been any problem for us yet. The thing about sourdough is that it will usually fend for itself as long as you keep it fed and thriving. The particular yeast/lactobacillus culture in a well-maintained sourdough will crowd out most other yeasts.

I Tried this today and it was GREAT only slight problem charred underside of bread,
but crust nice and tasty + good crumb inside, I will try this again..... yum !
