According to a supplement for the Stargate SG-1 RPG by Alderac Entertainment Group, the "kawoosh" is probably the mouth of wormhole itself erupting from the "event horizon" as it forms, and what happens when said proto-wormhole destroys matter is, it breaks apart atomic bonds and reduces formerly-solid matter to free electrons. It doesn't mention what happens to the protons and neutrons. O.o

@AzaIndustries Well the gates have a complex molecular buffer so they would tumble out as if they had actually just run into it from behind at high speed.
To be more exact, the "kawosh" turns everything in it's path to particles (or something like that) and uses it to power the gate, so the iris might actully cause a small amount of "damage" to the gate if its closed upon gate activation. (Damage meaning exhausting the gate a tiny bit more than a regular activation)
If the iris is closed when the unstable vortex (kawosh) 50%of the power needed to keep the wormhole stabile will be drawn from the SGC complex power instead of the air infront of the gate as it usually would. Meaning that closing the iris after the vortex has retracted requires less power but is more dangerous as the iris is a bit slow at times.
yeah, look it up, "watergate" being the most prominent example, the dialing outgoing gate provides the power, once the wormhole is established (after the kawoosh) then power can come from either side, like a sentient ocean's warmth powering the gate, the kawoosh is simply the unstable vortex of the event horizon forming and stabilizing, if it worked lik you say it does, then the space gates in SG Atlantis would be not all that reliable.
You know its kinda strange cuz the gate goes like Kaaa Kaaa KAwooooooooooooowsshhhh
But still magnificent and even better the super gate goes KAWOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOOSH!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
I can tell you how they made the actual effect? =]
They had a jet engine mounted above a pool, with a camera underwater, it filmed the water being pushed away by the exhaust gases and a bit of copy/past and viola - the iconic Kawoosh!

Walter always closes the iris right when he get's an incoming wormhole.
It dont cause damage to gate or iris.
The iris is just a few atom layers away from the event horizont.

i think that the concept of the liquid from the stargate is quite logical.
having liquid to keep the cells and all that in its original scape instead of tossing it out in space during the travel.
kinda like a protective coat
