I'm from the South too. Grits is very versatile. You can spice it up any way you like, or make it sweet. Baking it with cheese (mixed in or sprinkled on top) was popular too. I haven't had grits in years now!

creamy grits can also be achieved by cooking them a long time & constantly stirring... i just made some a 1/2 hr ago an and they were the bomb.com... you must watch the pot and stir stir stir and then stir some more and i cook mine for at least 30 minutes with just grits water & salt... then i let everybody add their own amount of butter...
