@livetolovesome182 I think it would have been even better if Mr. Brown had been sporting a trenchcoat and fedora, in keeping with the opening sequence.
According to "Good Eats: the Early Years" cookbook, right before Alton Brown sat down and started talking to Robert Steinberg he walked into a cargo door off screen and gashed his head open. They didn't have a first aid kit on hand so they tried to use duct tape to close the wound and it didn't work. Alton Brown bled during the entire interview which is why he sat profile to the camera. You can read the actual entry itself on pg. 71 of Good Eats: the Early Years" cookbook under the trivia entry.
So I'm reading Good Eats: The Early Years, and I just got to this chapter in the book. Apparently, during this interview, he ran into a cargo door and gashed open his face -- hence, the awkward camera angle. I had to come here to watch the episode after reading that.
Kosher salt is also a larger grain than table salt, and is a "clean" salt. Meaning it typically has no additives like iodine.
Also, something being "Kosher" has nothing to do with it's religious connotations. Yes, a traditionally practicing Jew is technically only allowed to eat Koshered products, but many chefs like it because Kosher products tend to have higher and safer cleaning standards, especially when it comes to things like preserves and meats.
@Tokorai People always cite the passage in Leviticus when talking about how homosexuality is condemned....the problem being that that chapter also condemns eating shrimp, pork, and rabbit, and says you're supposed to burn a goat in attonement for your sins....
@PeregrineOmega You said: "something being "Kosher" has nothing to do with it's religious connotations..."
Actually, it does - it's entirely about Jewish Halakhic law. That's what the point is. However, you're right in the sense that one need not be Jewish to enjoy the benefits of Kosher food - standards, healthfulness, prep, quality, etc.
Koshering salt is used to cure foods to make them, well kosher. He doesn't use it for koshering food, he is more interested in koshers salt shape and texture.
He doesn't use Kosher salt to Kosher the food, but because it's easier to pinch than table salt. And in any case the use of Kosher salt isn't limited to Jews.
Salt often does serve a purpose in the recipes. In Art of Darkness II, he explains that it in essence primes our tongues for the chocolate, enhancing its flavor. In Flat is Beautiful (pizza), salt serves to limit yeast growth. In other situations like with potatoes and pasta, salt serves to make the item taste "more like itself."
Chocolate is good for you. It's loaded with antioxidants. The milk and sugar in it is what's bad for you. the darker the chocolate the better it is for you.
@Tokorai Oh man, you pulled out the discrimination line. Well, for YOUR information, I don't like white chocolate either! Just call me a chocolate-ist! =P
(I actually don't like white chocolate, though... has a weird twinge to it)
Scharfen berger is great chocolate. I love their unsweetened chocolate which is good for brownies, cakes, and fudge. Their other flavors are good too: bittersweet and semisweet.
I've actually never used Scharfen Berger for baking, but I've tried their eating chocolate. Not my favorite, however. Sorry, JGuy! but I am definetely a chocolate lover. See's or Ghiradelli, Lindt for eating chocolate are my favorite.
though white chocolate isnt really chocolate at all...
its everything in regular chocolate, accept theres no cocoa solids. and i have to correct myself.... sweet chocolate is actually just milk chocolate. oh and chocolate comes in bitter also
@biggajigga721 Note that in a later Episode he says "White Chocolate Cannot be labelled white chocolate in the USA, but we buy stuff labeled white chocolate all the time, don't we?

Furthermore, something which is Kosher, is usually only so because it has been prepared in a salt bath, or brine. ;)

Sure as hell didn't save bacon though. Pig is unclean in the Jewish community. Though i never did know why...

It has a cloven hoof, but it doesn't chew cud.
Hooray for looking through Leviticus to find passages people who protest gay rights don't obey!

That's kind of a good thing. Leviticus can possibly be singled out as the single most discriminating part of the bible.
Maybe that's why i became a druid...

Most dark chocolate is quite delicious. 70% dark I find to be kinda gross though.... bitter, yuch.
Feel free to eat it if you like it, though! :D
RooneyEnterprises 3 years ago
True, but once you get into the 70% ranges you're talking about stuff closer to bakers chocolate then straight eating chocolate, atleast imo.
