  • That's a nice simple sauce, almost how it's done in Italy (they would use crushed tomatoes that they put in jar's them self's) but I'm sure you know that, I can almost smell it mmmmm I want some, Viva la'talia.

  • see what you dont understand is I used San Marzano tomatoes, which are the best money can but. The key word here is "SIMPLE". try it first then knock it if you dont like it.

  • I believe the sauce is watery because the tomatoes used were the plump ones with whole tomatoes in its own juices. It may seem watery but is sure as hell beats tomato puree. And as far as I am aware, adding salt too early in the cooking process sweats the tomatoes, causing them to dry out and thus create a very watery sauce with huge chunks of dried out tomatoes. Taking a more chef-like standpoint, i usually add a teaspoon of sugar with the tomatoes just to counter the sourness given out.

  • Btw i might not be a top cook or chef but you don't need to have much common sense to use fresh vegtables when making a sauce.

    and water is fine, but what would make that sauce abit tasty is tommatoe paste and salt and pepper no butter, only if your going to add it in the begining in substitute for the oil! =)

  • Canned tomatoes are 9 times out of 10 better than fresh produce for things like sauces. Mainly because they're canned at the peak of ripeness. I wouldn't go trying to make a tomato mozzarella salad with those though.

  • I've been doing this exact same recipe for a long time. Excellent sauce, quick and easy and can also go many different ways. This is just a starting point but is perfectly fine the way it is also.

  • Why don't you use FRESH tomatoes? They taste much better and Italians make their sauce with fresh tomatoes too.

    Also, during my vacation in Italy I saw that they keep their sauce very simple, and they often put chopped black olives in their sauce.

  • rubbish recipe- no seasoning basil etc. Just a lot of fat- 4 tablespoons olive oil and 2 of butter is absurd

  • no seasoning ? unreal ! 20 min to make sure bet its nice - personally i make it without EXTRA virgin olive oil (which is more delicate and is for salads and dressings) use normal olive oil-use a puree or tomatoe ketchup dont buy tins with herbs already in ( use fresh ) and give it about 1 hour to reduce !!

  • this is nice you share your recipes with us but you're telling us not to buy tomato sauce from a can but you use a can of diced tomatos. I've always wondered how they make tomato sauce because using a blender on a tomatoe is a nasty foamy mess.

  • what I use is imported san marzano tomatoes which are considered the bestin the world. not just diced tomatoes. there is a big differance.

  • Its hard to find good fresh tomatoes though. Alot of the shit that they have in super markets, especially during the fall, winter and spring really isn't all that much better than a good can. not too say that all canned tomatoes are equal, you do have to do a little bit of experimenting, but its a lot easier prep wise and price wise to go for a good can 90% of the time.

  • My Italian Grandmother's sauce was way thinner than what alot of people like today. When I first made it for my wife she thought I did something wrong because she is used to Prego or something...but now she loves it.

  • the water is nessary. all you have to do is keep it on the heat and let it reduce until you get it to a consitency that you like. It is very simple. Peace and Blessings

  • the idea with the water is to allow the sauces flavours to improve through cooking but without drying the mixture out. the water is meant to be vegetable stock and is to be reduced out of the sauce, but this sauce doesn't look like it's been on long enough for that to happen. you use the tin as a measure (one water to two chopped tomatos), but it's also to extract the last of the flavour from the tin.

    but he is missing key ingredients like a little wine and celery.

  • the wine and cellery is to ones taste. thats what great abut cooking never being afraid to improvise. Enjoy.

  • Not quite sure why you're adding water to the sauce. If all your doing is adding water then cooking it off, you're right back where you started. Except the sauce is little more watery.

  • No some flavoures won´t come out so good if you just cook the tomato sauce for 5 Minutes. So you add some water to make sure it won´t burn and you cook the flavour out of the onions and the other Spices. Good Food needs time ;). In Bologna, Italy they cook the Sauce Bolognese for like eight hours before it get´s served.

  • It cooks for tweny minutes and since it a small amount all the flavors do come out. And even when you shut off the flame it still cooks. The 8 hour sauce is something that occurred here in the US when the peasents came here from italy at the turn of the century. They had to cook every for a long time because they had the worst meat so it had to break down to be able to eat it. that where the 8 hour sauce came from.
