Yes, it does make a difference in noise. Having no cats to restrict the flow does affect the sound as you can tell in this video.
Power-wise, you *might* get a non-noticeable gain (read: 2-3 brake horsepower), if any at all since the engine doesn't have to work as hard to push the exhaust gases through the pipes, so basically, you're freeing up a bit of power that the car already possesses that would've been robbed had he kept the cats on.
actually...cats arent as restrictive as you may think. but you are correct. there would be pretty much no hp gain...unless your cats were clogged.....

Taking the cats out just means the system will not sound good anymore, it will be very harsh and crackle (in a bad way).

When i replaced mine i got a deeper and lil louder sound. Some people say removing cats makes it get raspy.

did you keep the resonators on? what kind of muffler are you using?
very nice sound a little raspier then mine i just took the cats and rezos off kept the stock muffler....
