It's absurd to warn people that they MUST use a pressure cooker- what crap. This is why people want LESS government control in our lives, because government magnifies everything when it comes to so-called "safety". Just boil the damn jar and you'll kill the bacteria- as a microbiologist working for government, I have enough trouble trying to get bacteria to GROW and THRIVE; it ain't hard to kill bacteria, and temperature will do it every time.
Ag Extension does a great job teaching canning. Their research is extensive (Univ of Georgia). Better safe than sorry. It's easier to follow directions then recover from food poisoning.
@TheBrassHole None of what she suggested is "the law" and you don't have to go to your extention office for canning guidence. Go buy the Ball Blue Book guide. As for your conspiracy of "who is working for who" I have doubts that the USDA is owned by Mason Jar company. My local extention office has helped me a lot in becoming self reliant in growing my own food. You can eat whatever you canned and process it any way you want. What rules is she forcing on you??
