you don't glue your eyes to the conductor. i never have. i can see him with peripheral vision. so even though they don't look up, it still does matter who the conductor is.
The London Symphony Orchestra has recorded every the music for each of John William's Star Wars scores. There is no wonder why they seem to have the best interpretation of these themes - they've played them so much!

Sorry...misunderstanding...Have you seen the video of John Williams during an interview about scoring Phantom Menace? On one of the parts (it's kind of long), he mentions that even though the orchestra personnel has changed quite a bit, the orchestra's interpretation is largely the same.

They didn't looked at the conductor. They looked at their notes. So it doesn't matter who the conductor is.
