I can only best describe it like this, think of the best red wine you have had, remove 90% of the sweetness, all the alchohol, all of the fruitiness. + A few seeds of vanilla + A few large top quality portobello mushrooms squeezed into the concentrated size of a golfball + one pure egg yolk.
Very woody yet with only a speckle of bitterness but the good kind of bitter, without astringency. Very aromatic, pungent -that's why it is not eaten whole. Earthy, warm.

They do get a 4th Iron Chef, Iron Chef Italian Masahiko Kobe. And Michiba is eventually replaced by Iron Chef Japanese Masaharu Morimoto. Iron Chef Chen Kenichi is the only one who stayed for the full course of the show. Sakai was the second Iron Chef French and Morimoto was the 4th Iron Chef Japanese.
Actually there were only three Iron Chef Japanese, the first one was Michiba, the second one was Koumei Nakamura, and the third and final one was Morimoto.
I do know the outcome of this battle, but...if he wanted to be an Iron Chef, he shouldn't have challenged Michiba. He was the best of the three at the time.
It was the right call, he wanted to prove he is an Iron chef caliber and to do it he have to beat the best, he is not after a win but honor of beating the best
