  • What do truffles taste like?

    I can only best describe it like this, think of the best red wine you have had, remove 90% of the sweetness, all the alchohol, all of the fruitiness. + A few seeds of vanilla + A few large top quality portobello mushrooms squeezed into the concentrated size of a golfball + one pure egg yolk.

    Very woody yet with only a speckle of bitterness but the good kind of bitter, without astringency. Very aromatic, pungent -that's why it is not eaten whole. Earthy, warm.

  • @swiffstep It is not so much the taste, but the aroma; the reason that they are so expensive is that the aroma is unique and cannot be equated with anything else directly. However, black truffles, as seen on this show absorb the flavours of the soil they are grown around, so most truffles have hints of various woods like oak and maple when you eat them.

  • Picking Michiba is like suicide since he's way more experienced and skilled of the 3 Iron Chefs and Sakai is a French cook so going against him in a Truffle battle might be bad so Chen would be a wiser choice

  • They do get a 4th Iron Chef, Iron Chef Italian Masahiko Kobe. And Michiba is eventually replaced by Iron Chef Japanese Masaharu Morimoto. Iron Chef Chen Kenichi is the only one who stayed for the full course of the show. Sakai was the second Iron Chef French and Morimoto was the 4th Iron Chef Japanese.

  • Actually there were only three Iron Chef Japanese, the first one was Michiba, the second one was Koumei Nakamura, and the third and final one was Morimoto.

  • I thought a third took Michiba's place temporarily before they found Morimoto.

  • I do know the outcome of this battle, but...if he wanted to be an Iron Chef, he shouldn't have challenged Michiba. He was the best of the three at the time.

  • Haha, what a slow start from both chefs, especially compared to how Kobe always sprints to the ingredient stand at top speed. Kobe could have looted the entire pile and finished two dishes before Hattori even made it up the stairs.
