  • I often dust sliced eggplant with salt, then rinse to remove the bitterness (and solanine alkaloids). I do eat it raw after marinating or dehydrating : all methods of "cooking" that don't kill the enzymes.

  • Even though ovens are not as efficient as dehydrator's they will still work, just said it at 105°

  • I always thought that eggplant was dangerous to eat raw. Someone told me it's in the same family as itchweed and poision ivy and that it can make your throat itch if you eat it raw. Does dehydrating it get rid of this quality? If so, I'd absolutely love to try it. :)

  • @RachelMarie81 partually if one sprinckles salt on it we do get rid of that stuff, but not by dehydration

    Eggplant is in the Solanaceae (Nightshade) Family. Same as tomatoes, potatoes, and peppers. Poison Ivy is in the Anacardiaceae Family (same as mangoes!).

  • @marsbrigitte Really? Wow...that is crazy! I guess I do know someone who is allergic to mangos and she breaks out in hives in her throat if she eats one. So, it is okay to eat eggplant raw?
