  • When I remove water from veggies like spinach, I put it in a large tea towel and wring it out. It will remove lots of water but not damage the leaves.

  • Hi Dede, thanks for sharing! I love spinach pie & wanna try this one today. But 2 questions ... 1) can I substitute yeast with baking soda or skip yeast altogether in easy dough? 2) What's sumac & corn meal? Can I substitute those with anything or skip them?

  • @lifoc well yes you do need the yeast to make dough.

    you can omit the corn meal, if you omit the sumac you will loose a little of the flavor, but you can buy sumac on my site at dedemed.com

    I want to make meat fatayer. If I was going to use ground beef instead of spinach would I first to brown the beef? How long would I cook it for?

  • @anwarwalker89 yes you can use the ground beef, check out my samboosek recipe for how to prepare the ground beef for the filling. You can use this dough recipe or follow the samboosek recipe and use phyllo dough :)

  • @dacrazyone88 yes you can, just make sure to squeeze it from all of the excess water.

  • @nayomi17 well you can buy sumac on my site, or if you do not have it, you can omit it, sumac adds a bit of sourness to the filling, but you can just cut up some lemon wedges and squeeze some lemon juice on top of the spinach when you eat it :)

  • the first time i heard of spinach pie i thought "that sounds disgusting" even though i love spinach, but ill try anything once so i did and it was amazing. but i was wondering, do you suppose it would be good with jalepenos? i really like spicy food and like to experiment with things like that.

  • This recipe turns out REALLY good. I also found it freezes very well, but you can't reheat in the microwave, you have to bake in the oven. Just as good as the first day! I always wondered what that slightly sour taste in mediterreanean spinach pies was -- now I know it's the sumac. Thanks Dede!

  • Hi there! I made this today and they were delicious. Seeing as I haven't made bread dough in 10 years, they weren't the prettiest to look at, but they were yummy!

    I do have a question though - how many does this recipe yield? I rolled out 20 balls but seemed to be able to (unevenly) fill 15. Given the fact that it's the first time I made them, I know they were filled unevenly. But if you could give me an idea of how many to make, that would sure help! Thanks again for a delicious recipe!

  • Thanks for the comment. Here's the deal, sometimes you'll end up with left over spinach and sometimes left over dough. It all depends on how much you fill them. I would say it should yield between 15-20, just try to fill them more evenly and maybe a little less :)

  • Hi again... well, I made them again, this time around, I measured the amount of filling I made - which came out to about 30 Tablespoons. So, I divided the dough accordingly. This time, they were much better looking and even more delicious! My husband has a Lebanese woman who comes into where he works - she's a caterer. She brings him Spinach pies in all the time. My husband says that these pies are just as good, if not better, and this woman's pies are delicious too! Thanks so much!

  • hey i was wondering, do some arabic bakeries make fatayer with zatar? i've had zatar mixed with olive and dipped khubus in it, but ive had pastries b4 with the spinach mixture inside the dough nd i swear it tasted like it was mixed with zatar... maybe its a khaliji thing?

  • Yes you can definitely fill it with zaatar as well, it would taste amazing!

Can i just spray them in the beginning before i bake them? Let me hun. Thanx again in advance!! Keep the recipes coming...THEY ARE GREEEEAAATTTTTT!!! Much better than Kellogs frosted flakes!! lol

  • The reason I use olive oil is because it adds a nice shine to the pies and also helps them to brown nicely. And yes you can just do it in beginning.

  • Hello dede. Yup, it's the gal with a million questions! I finally made the spinch pies and i must say...the spinach mixture was to die for! Loved it sooooo much! Who would've thought adding tomatoes to the mixture would make it unbelievably delicious! Thanx soo much! I had one slight problem when i made them. My dough kept opening a bit and some of my spinach would seep out, even when i sealed the dough real good and tight. My dough was'nt too thin or stuffed too much. What do u think happened?

  • Sometimes, the pies open because the dough expands, you can try making them in the calzone shape as well and twist the edges closed like a pizza pie and that usually works really well :)

I have a few questions please....Is it ok to use diced tomatoes from a can for this recipe and i also wanted to know what flour do u use when making your dough????? I have bleached all-purpose flour. Will that do fine for when i make the dough? What exactly do u use? Thanx!

  • Hello and thanks for the comments. Well I would recommend using fresh tomatoes. The canned ones have to much liquid and the fresh ones add a wonderful element to the spinach. Yes I do use bleached all-purpose flour, sometimes I like to add a cup of wheat flour to make it more healthy but generally I do use the bleached all-purpose flour.

  • Hello dede, i hope you are doing well. I have a question to ask you regarding the dough....Once you have placed the mixture inside the dough and completely sealed it, i wanted to know if the dough cooks completely on the inside once the they are cooked due to the fact that u have to seal them completely on all sides? Will they cook completely on the inside without it being soggy or having the dough not cook ALL THE WAY?

    The dough will cook through b/c you are rolling it out and it is not that thick when you do, that way it will cook all the way :)
