We regularly use a two-mic setup, even for mono guitar signals. Stereo micing offers a more complex, more realistic representation of the sound (unless you're deaf in one ear). Naturally, when summed to mono, it's going to sound flat and one-dimensional by comparison. It's also likely that you're hearing some phase cancellation in the mono sum.
@ProGuitarShopDemos Oh that's really interesting, because in another video someone commented on why you didn't use stereo outs on pedals to demonstrate unique stereo out signals, the TC SCF for example. The response was: using a stereo recording process would be far too time intensive and costly.

They go hand in hand. Higher frequencies will jump out and sound more intense, but yes it's really changing the frequency sweep not a blend or intensity.
