I was told that the eggplant skin is fully loaded with lots of antioxidants & so when you are pealing off the skin, to leave some of the skin on! Thats what I am going to try when I make this, is to just leave a little of the skin on! =)

Watching Victoria brought back many memories of sitting and learning from Mrs Rinella as she cooked many tasty meals. Wish Victoria would make anis cookies like we used to eat while playing canasta!
