I am co-owner-manager of a NY (Brooklyn) style pizza restaurant....trust me...double oct high gluten flour with a slow rise in the fridge is the only way to go. In the words of the great AB, "Your patience will be rewarded." Not only does it taste better, it is much easier to work with when you get it to the make table.
Not my culinary instructor but rather my microbiology professor says no salt on yeast. Although it is true that fungi can live in very hypertonic environments so maybe salt isn't that bad for them, it probably does kill some off though.
@CO2umbrella one would think its more a matter of duration of exposure than the amount of salt put on them. If you toss the salt on the yeast and then toss the wet team in and mix right away...there just isn't enough time for any nasty chemical reactions to wreak havoc with the little guys. If it sits on it... yes it will kill it sure as a crate of salt will kill an elephant...
@hadokat You might want to try out the pizza dough recipes in Artisanal Gluten-Free Cooking by Kelli and Peter Bronski. They have two pizza dough recipes that you might like, one thin crust, one deep dish.
You can use the malted barley syrup tp make beer. Thats the same stuff that they sell with the Mr. Beer Kits. If you stop by your local home brew supplier you can buy 3 pounds for 10-20 dollars.
