Tayloring to your preference is more along the lines of salty vs. bland, meat vs vegan, etc. I think it is crazy to call this a banh mi. I think someone took the xui mai and thit nguoi and mixed the two together. Xiu mai is streamed and the thit nguoi doesn't include bologna and salami. A real Vietnamese banh mi doesn't use jalepeno peppers... it's an American adaptation to the sandwich for profit. We use cilantro and here they try to pass flat leaf parsley off as cilantro.

There can be many variations of the "real" banh mi sandwich but they usually don't include mayo, salami, or ground pork. To make a real banh mi sandwich:

1) split and toast baguette. Slather a bit of butter, then pate or I use liverwurst from the grocery store.

2) Slice bbq pork, pork roll sausage (found at oriental mart in the fridge/freezer section wrapped in banana leaves or foil).

3) sliced cucumber, sweet pickled carrots & turnip, cilantro, and thinly sliced jalepeno.
