Hibachi chefs who do similar feats are actually very common, and I have personally seen both the egg-spatula juggling and the onion volcano done at (I believe) Kyushu restaurant in Ithaca, New York. It's a choreographed performance available in many Hibachi restaurants.

Hmmmm, amazing entertainment and circus. But not an amazing cook. There's only so many ways you can do this type of food, it tastes essentially all the same from one place to another. It's very simple food. The talent lies in his mechanical entertainment skill, which is quite enjoyable. But his cooking outcome with the food can be duplicated by you and I at home. An amazing chef is Marco Pierre White, for instance, among many others.

@cliffcox66 Well when most people do go they tend to go for the show aspect. I tend to see some of the best at the more expensive ones where you can easily spend $40+ a person with no alcohol included, but I've also seen plenty of great chefs at the bargain restaurants. Though I've never seen the "shrimp rockets" I saw after 1:40 though. Every chef has their own style but some of my favorites talk a lot. They keep your attention...especially the chefs that like to fuck with you :P
