Two things.

a.) It's a cover. It doesn't really matter that the Pixies' drummer didn't play the highhat.

b.) Any sound issues would be solved by mic'ing and mixing. That's probably expensive for your weekend jammers, but if one were to be seriously laying down a track that's the only way,

My band has the same problem with the drums being to loud. how we fix it when we record a vid, is that we put the camera nearest to thing that we want to be heard the loudest. for example, in a song where the guitar is very important, we'd put it nearer to the amp, than anything else. anyway, great cover!
